Lately we’ve been on the go so much that fuel is key… it’s essential. Who else gets a hunger headache which then turns into hanger?
Barley is one of the most healthiest foods, it has “molybdenum, manganese, dietary fiber, and selenium, and a good source of copper, vitamin B1, chromium, phosphorus, magnesium, and niacin.” The last one we have never even heard of, but it’s good for you!
So mix it up! Real simple for a side dish or lunch the next day and it will help your energy kicking past the 3:30pm lull.

- ¼ cup barley
- 1 tbsp fresh dill
- ¼ cup feta
- salt and pepper to taste
- water
- In a medium deep dish sauce pan pour about 5cm of water and the barley in. Cook on medium high until water begins to boil.
- Turn heat down to a simmer and cover with a lid for 40 - 50 minutes, or until all water is evaporated.
- Take off heat. Stir in fresh dill and feta. Salt and pepper to taste.
