We all get that need to snack. It’s 10:30am you are already hungry and your lunch break isn’t for another couple of hours…
Normally, you might go grab that bag of chips or chocolate bar from the vending machine, you know it isn’t healthy but heck its quick and easy. But here is an alternative, a quick snack you can make at home, portion them out for the week and it’s a rather healthy alternative.
This one bowl wonder will save you money in your pocket and fuel you with energy when you need a little pick-me-up. We call them almond butter power balls, as they will give you the power to get through your work day.
This is a great combination of oats, flax seeds, pumpkin seeds, coconut and a little bit of chocolate for the sweet tooth. They taste so good, and they are better than your regular old granola bar as you know exactly what ingredients are in them. Give them a try they will not disappoint.
- 1 cup rolled oats
- ½ flax seed
- ⅓ cup shredded coconut
- ⅓ cup pumpkin seeds
- ½ cup almond butter
- ⅓ cup honey
- ½ cup chocolate chips
- 1 tsp vanilla extract
- In a large bowl add all ingredients together and mix until well combined. If it's still a little dry, add one more tbsp of Almond Butter to the mixture.
- Chill in refrigerator for 30 minutes.
- Use a Tbsp to scoop and roll into individual balls. Makes about 15 - 20.
- Keep in air-tight container in the fridge until ready to eat.
